Day 7: Basking in the Sun

As we come to the end of our first week of Meat-Free May, we’ve decided to keep things simple. We’ve been in the back yard enjoying the sun with our son, so no original recipes today, just plant-based wholesome dishes packed full of flavour.

Day 7 Menu

Breakfast: Scrambled Eggs & Baked Beans on Wholegrain Seeded Toast

Lunch: Spring Vegetable Kedgeree (recipe here)

Dinner: Spicy Harissa Lentils

Dessert: Mint Choc Chip Ice Cream
